Potato Fans


This is one of those recipes, when after trying it, I thought "where have you been all my life?" Upon further investigation (cause I'm a dork), found out that these are similar to Hasselback Potatoes, which is a Swedish recipe. 

I originally found Ina Garten's recipe, but have changed it up just a bit to incorporate some of my own food needs. I gushed so enthusiastically about my results that my mama made me (I went kicking and screaming, as you can see) make a whole passel of my potato fans when visiting the farm this past weekend.

I asked her to grab her camera and take a few pictures so I could share the magic with you.

First of all, I made a batch using Sweet Potatoes. I follow a low glycemic plan, so these are perfect for other like-minded eaters. Or you can make them because you like sweet potatoes. I happen to love them.

The goal is to make slices all down the potato. Don't go all the way through (though it is not a "throw the potato away" offense). I slice them to about 1/4 to the bottom. 


Oops. I forgot to tell you something important. Cut off a very thin slice from the bottom. It will help the potato stand up. Just ignore our little potato bugger.


Place the potatoes on foil. You can see that this particular potato lost its end (I cut it off), but I stuck the offending slices back in between the other slices.

 Beautimous.


Then get a variety of stuff out of your spice cabinet. For the sweet potatoes I chose simple spices. Garlic salt, black pepper & Rosemary leaves. Melt 2 T. of butter and 2 T. of coconut oil together. If you haven't been lured to the coconut oil side you can use olive oil. 
 

Brush the butter all over in and between. And wear a white shirt. That way you can be assured to dump, spill or splash something greasy all over you. That's how I roll.


 All dolled up. I also sprinkled nutritional yeast over the top. I really could have waited until after they were cooked, but they turned out just as yummy.


Put them in a 450 degree oven. You will need to set the timer for 10 minutes.  After the 10 minutes, brush the potatoes again with the butter mixture. My mom wants to point out how nice and clean her oven is. I'm afraid I can't say the same about my own oven.


This is the "passel" of white potatoes. I used the same method, except I nixed the garlic salt, pepper and Rosemary leaves. Instead, I used some Memphis style rub. Oh, yes...


After  you brush butter on the potatoes (10 minutes), the potatoes will cook another 45 minutes or so. Just check on them often. I like the skins to be crispy and the insides to be buttery soft.


This is the finished Sweet Potato. They are unbelievably rich and moist. Not to mention the sweet potato skin is one actually worth eating.


The options for this recipe is endless! Try out your own favorite spice combinations and blends. You won't be disappointed.

I don’t know about you, but I LOVE free. I also love interactive and COOL. And really. There are sooo many free and cool resources on the web that we’ve enjoyed using in our Homeschool. The list below is not specific to age or subject matter.  My criteria for sharing the resource was based on Josiah’s interest level and ease of use…not to mention my own personal opinion. Which matters quite a bit (if you ask me). I also tried to choose resources that are interactive in some way. We like things that zoom and beep and whistles at us in our house.

I have a long history with National Geographic. Did anybody else’s Dad subscribe when they were a kid? National Geographic was my first taste of other cultures and exotic wildlife. And the Chin Has It! A Weight Loss Journal

As part of my ever evolving “Be Good to Beke” plan, I am keeping an online weight loss journal. My plan is to tell you how much weight I’m losing, what kinds of things I’m finding that help…etc. etc. And probably (because it’s me) I’ll ramble on about a variety of weight loss related topics. Hopefully. I’m not above discussing the latest episode of Downton. Keep in mind that while I might have an opinion I am not a medical professional (nor do I play one on TV). Be sure when embarking on a healthy lifestyle transformation that you work with a medical professional...especially one who you trust.


 Spring! It's not quite here yet, but we saw a few nice days in the Ozarks this past week.  And yes. Some of our folks think any temperature above 50 is a sure sign of short-wearing weather.

Not this girl. There has been a cartoon floating around Facebook of a lady perched on the edge of the bathtub. She appears to be ready to shave the forest that has sprung up on her legs...with a chainsaw. I feel her pain.

This week we  had to eat out (I went kicking and screaming, of course) not once, not twice, but three times.  Sometimes life is just busy. And sometimes I happen to have a taste for the new Panda Express (we've gotten 2!) that have opened in our town.

Not to worry. We didn't eat there 3 times. Just once. I'm not that obsessive. Maybe.

This is how I handle eating out. For one, I always go with a plan. A lot of national chains will have online menus and nutritional information posted. Even many of our smaller local restaurants have started posting their  menus. I know that if I have a plan and an idea of what I want to order I will be less likely to order impulsively. Even when traveling I know what fast food options are going to be healthier for me if we have to drive thru somewhere.

Many restaurants are making an effort to include tasty dishes on their menus that are healthier. Don't automatically order a salad.  Just because it contains lettuce doesn't mean it's your healthiest option. An exception for me is I generally order a chopped salad from Subway. I even love the pickles in my salad. Subway is great because they have an online calculator that lets you calculate everything you added to your sandwich or salad.

Because I follow basically a low glycemic diet, I know that some options are just a better for me. I order a sweet potato instead of a traditional baked potato. Just have a plan. Did I say that already?  This article from Sparkpeople.com has some great advice for eating out. I've referred to it many times.

Foodie
One of my favorite things to make are  Burrito Bowls inspired by Chipolte. In fact, they are on my list for this next week's meal plan. I generally make a big batch of my  Thrifty Gal's Salsa and guacamole.  Have I told you about skinnytaste.com, yet? I'm sure I have. I absolutely love this site. One of my easy favorites to serve with the Burrito Bowls is this easy Cuban Black Bean Recipe. This recipe for Cilantro Lime Rice is also a keeper. I just stay away from the tortillas (I make sure there is plenty for The Muffin and Josiah). There are low-carb and whole wheat tortilla's available, but I have learned to love my Burrito Bowl without them.

Move It! Move It! 
I moved quite a bit this week. I feel pretty good about my workout choices. I recently made a purchase of a workout video that I'm excited to try. I haven't got them yet in the mail, but I will be sure to chronicle my experience. I do have a question, however. How does one work out a double chin? Good grief! I know it's not as large as it used to be, but I had little bit of a fluffier face when I was skinny. My face is holding on to every bit of chin it can. My mom took this pictures of me today in her greenhouse.  She took pictures for me for my writing bio gigs (and a new blog picture). I've changed my hair so I had to change my picture, right?

I realize that my eyes are funky and it appears I am staring off into space (which is normal for me). In my defense, however, I was staring at some cows in the field. I just was staring at some cows in the far corner. I eventually changed what cows I was staring at. I chose this picture to show you so you could appreciate my double chin in all its glory.

Random Thoughts: I Thought We All Had Bangs

I know! It's been a while since I've posted anything "Random." I know you've missed my ramblings about nothing in particular. It's the best part of your week, right? 

Before I start (rambling), I want to take just a minute and address a very sad occurrence that has happened in my community. A young girl was taken from the street and murdered by a local coach. I can't even believe I am typing this and that I'm including it in my "Random" post. I tried to write a post about what had happened and my feelings, but I didn't think it was appropriate right now. Not that I don't have my opinion...but it's not my story. It is about a beautiful young girl and her family. I think it's going to be a long time before my community comes to terms with this. Things like this just don't happen here. We are all hugging our babies a little closer today.  Would you please extend your prayers and thoughts to all of those involved? 

Now that I've shared just a little of my heart...here we go!

1. Okay. So maybe I'm not done. I really think that we have to be careful not to make other peoples tragedies about us. Here me out. How many times do you see something happening around the world and out of the blue a certain "group" shows up seeking publicity for their cause. Are you kidding me? I'm worried that it's going to happen here. I would discourage such actions. You don't want to get a bunch of hillbillies riled. Just sayin'...

2. Speaking of hillbillies....My mom and I took a bit of a detour a few weeks ago in search of a Mennonite grocery store. It's a long story, but here is just a little taste of where the GPS lady led us. 



Oh yes, she did! This picture is just one of many views we saw our on our journey. My mom made an adorable little video chronicling our trek, but I still need to upload it. I will share...I promise! I will say this. I was driving.

3. Next time, I'm thinking we should take my car. Not that Mom's little Geo Tracker didn't get the job done. But my car has a whole back seat full of stuff I need to get to the Goodwill. It has been this way since before Christmas. Don't judge me. It's been cold. It's not easy to be generous and industrious when you're cold. However. I was thinking that next time we get lost at least we would have supplies. No telling what I have back there in my donation bags.

4. I seldom get huffy. It's just not in my nature. I might have a "beef" with you, but you probably won't know it. There was an instance this past week, however, that almost "done me in." Okay. Here is the deal. When I go to the YMCA there are only certain machines I can use because of all the pins and screws in the lower half of my body. My favorite machine is called the "nu step." One day this week I went up during Josiah's Swim Team practice and a lady was using the "nu step." That's alright. I can share. I popped myself up on the treadmill and started walking. This is where it got hairy. The lady hardly used the machine at all! She was using it as a sofa to watch Dr. Oz on the big screen in front of her! Of the 30 minutes I was on the treadmill, she probably used the machine a total of 3 minutes. So. Do I say something? Do I politely recommend that she move over to the recumbent bike next door? Not me. After all, the world isn't going to end. Maybe she gets poor television reception at home? Maybe she can't do two things at once...like watch TV and exercise?  It's no skin off my nose.

5. The Studly Muffin has jury duty this morning. He was originally scheduled for Tuesday morning. Then Wednesday morning. Now it's Friday morning (his day off) and he is sitting up at the courthouse with 186 other conscientious citizens. We had planned a day out. Instead I am forced to do housework and Josiah has to finish his homework for the week. Never fear. Our justice system is in good hands with The Muffin. He is wise. I'm all like "You people better just be nice! Don't try and tell me you were just in the wrong place at the wrong time. Next time do what your mama told you to do!" Can you tell I have just a few issues?

6. Apparently, I have StarKiller living at my house. One of Josiah's favorite Christmas presents has been a Star Wars video game he got from his Grandma and Papa Teague. The main character's name is StarKiller. Josiah has decided that StarKiller is an absolute fantastic name and therefore wishes to be called such. Whenever I have hollered at him (for various reasons), "Josiah," I hear this voice in the back...."It's StarKiller, Mom!"  One of these days I am going to use this memory as a tool to my advantage. I'm thinking it will be a fun story to tell his college buddies..or future wife.

7. I have to share a funny story. This is not my story. It is Baby Sister's. She has a Random child. Baby Sister, herself, is not Random.  Payge is Baby Sister's youngest child. She is a delightful nearly 5-year-old who among her other amazing qualifications can speak "dog." True Story. Just ask Payge. This past week the family was at supper. Paula (Baby Sister) and her dashing husband Greg were discussing something (I'm sure it was grand) and Payge pipes up in the middle of nowhere. "I thought we all had bangs?" The rest of the family just stops and turns in her direction. What? Where did that come from? There had been no discussion of bangs or any other hair issues.  This is just further proof that no matter who you are and how well your head is placed on your shoulders...your children might just inherit your older sister's Fruityness. Just go with it.

That's all I have for today! My son has been making strange comments about apparently starving. Silly boy. He knows where we keep the peanut butter.

Creamy Corn Casserole


This is an instance of "Eat as I Say" not "Eat as I Do."

But if you are not adverse to eating corn and cheese all mixed together then this is the dish for you. I personally love this dish, but in my calorie conscious state it is not one I am enjoying too often.

Eat at your own risk. And think about me. I've tried to think how to enjoy it on my current diet plan, but I'm avoiding almost everything on the ingredients list for a time.

I'm scaring you, aren't I? This is a wonderful church potluck dish...and a wonderful company dish. And oh, so easy!

Here it goes. Are you ready?

You Will Need: 

1/2 cup of milk
1 8oz package of cream cheese
3 c. White Shoe Peg Corn (though I have used regular corn without any ill effects)
1 can chopped green chili peppers (optional)
shredded cheddar cheese for topping

How To Make It: 

Mix together cream cheese and milk. It helps if you let the cream cheese soften first...trust me. Add the corn and peppers and mix together. In the picture above I didn't have the chili peppers...which is entirely optional, but really, really good. I did chop up a small red chili pepper to give it some zing. Zing is good! But entirely up to you.  Pour the mixture into a casserole dish with shredded cheese on top. Bake in a 350 oven until cheese melts.

I have even stuck this in the crockpot on low. Easy Peasy!

Nothing Lost. Nothing Gained: A Weight Loss Journal

My plan is to tell you how much weight I’m losing, what kinds of things I’m finding that help…etc. etc. And probably (because it’s me) I’ll ramble on about a variety of weight loss related topics. It has been one of those "so-so" weeks. The good news is that I haven't gained any weight. The bad news is that I haven't lost any either. I told you a few weeks ago that I had put myself on a extremely low carb diet to jump start a very loooong plateau.
It worked the first week (I've been on it 3 weeks), but since then I've not been able to keep my eyes open long enough  to appreciate my skinnier self. Girlfriend needs her oatmeal! 

By Wednesday morning of this week I was exhausted and frankly, starving. I know I technically can't starve. I've got plenty of fat to eat through before I start looking a poster child for skinny. Anyhoo. I stepped on the scale only to find that I hadn't lost anything. Nothing. Not even an ounce. 

I went to one of Josiah's activities and wailed on my  friend's shoulder. "I look like I'm 12 months pregnant!"  After assuring me that, in fact, I did not look like I was going to give birth at any moment, she gave me some good advice. And a much needed "talking to." 

For one, I have been extremely stressed. Anybody else feel like they are wound up as tight as a spring? I blame it on winter. And my hormones. And the mountain of laundry that has sprung up in the middle of my bedroom. 

Stress does some whacky stuff to a body. My friend (bless her heart) also pointed out that I had come so far. And she told me I was beautiful. Just the way I was. 

I did point out that I would prefer to beautiful at a size 8, but I took it. I needed it. I also realized that maybe I needed to regroup and calm down. My goal is to be fit and healthy and sane. I don't need to get there by March 1. Or even May 1. It's a process. It's a journey. The first 80 pounds didn't come off by me wishing or crying it away. 

I've decided that maybe my extreme low carb diet can only be handled in small doses. I fixed lentils Thursday night for supper and Friday I felt like I could run a mile (that is if I could run). This is after 3 weeks of not being able to pick myself off the couch. Those healthy complex carbs are my friends.

I think the moral of my story is that you have to find out what works for you.  What sounds like it should work in a popular diet book doesn't it mean it will cure all that ails you. You also have to consider other factors in your life. Frankly, being obsessive doesn't look pretty on me.

Foodie
This week I shared an absolutely fabulous recipe for Coconut Chicken with you. We are at my Mom and Dad's this weekend and there is a mess of  tilapia that is just crying out for the same treatment.

I also wanted to share with you a decadent dessert that has been my go-to treat. I get a much needed chocolate fix with this one....and it doesn't make me feel like I need to turn myself in (to the chocolate police). It is from the Trim and Healthy Mama plan. It's called a Volcano Mud Slide Muffin. Yum!

Move It! Move It! 
As I alluded to before, I have had extremely low energy. I did make one (ONE!) trip up to the Y this week while Josiah was at Swim Team practice and did a half-hearted workout on my favorite machine.

I just plain feel better when I move more.

Scale Says!
It didn't move this week. At all. I suppose I should be grateful that my lack of movement didn't cause me to gain 5 pounds. I have to say that I'm okay with it. I know what I need to work on and it's encouraging to know that eventually I'll get there. My goal this next week is to be more faithful with my workouts.

 I realize that sometimes I use my blog as my own personal journal. "What? She's talking about menopause again?" I do appreciate your listening ear, but I do want my little blog to grow. Grow into what I'm not quite sure yet. I guess we'll find out when I get there.

A Love Story





Maybe you’ve heard my love story before. It’s nothing spectacular. Girl meets Boy dressed as a cowboy. Girl decides she likes boys who dress up for a living. Boy and Girl date for about 2 minutes and get married 10 minutes later. 

So maybe I’ve exaggerated just a bit. 

I saw The Studly Muffin for the first time dressed as up as a cowboy. This much is true. He was walking down the foyer of our church. He was there that Sunday trying out as the Children’s Pastor. During our subsequent courtship and marriage (he obviously got the job), The Muffin has been a knight, a singing song-book, an airline pilot, a pirate, a religious scribe and an earlobe (true story). And those are just the ones I can think of off the top of my head.

That particular Sunday morning, I was supporting a purple dress and strawberry blond hair. The next time Troy laid eyes on me, I believe I was wearing red and had changed into a brunette.  I think we are well-suited. 

We barely knew each other by the time Troy asked me to marry him. I was very young (19) and he was had just turned 29. I’m not sure why he settled on me…after dating more mature and well-put together girls, but I’m glad he did. I have said this time and time again. I don’t recommend anyone marrying so young. The fact that it worked out for me had to be completely a God thing. Marriage is tough stuff.

We attended his Ordination service on our honeymoon. He had already completed 4 years in the Air Force and 4 years in Bible College before I came along. He had been a licensed minister even before he left the Service. My life experience included a stint in Beauty School and a part time job at McDonalds. 

I am not going to bore you with the details of our short courtship. What has happened in the subsequent years is the true love story. 

I was blessed with some wisdom early on. Courtesy of Mom. I want to pass it along to you. You probably know this already. Never expect any one person to meet your needs. That is an impossibility. As a Christian, I believe that God is the only source of contentment. As humans, we disappoint one another every day.  My needs are met in God. And because of that, I have been able to be a more complete person for my husband. 

My husband has stuck with me during thick and thin. You might feel that it was his job to do so, but in our world of unmet expectations, it would have been just as easy for him to cut and run. 

He didn’t ask for a barren wife. He didn’t think on marrying a woman who would gain 100 pounds in a year. He didn’t reckon for his wife to experience heart failure. He didn’t figure on his wife becoming permanently altered in a car accident. 

My love story began when this man brushed my hair when I couldn’t do it myself. When he gazed into my puffy eyes and told me I was beautiful. When he held me sobbing in his arms after a miscarriage. When he stayed up all night just be sure I kept breathing.

Our picture with the Ordination group on our honeymoon. I was so proud of my dress with its puffy sleeves and big pink bow. Of course, nothing says romance like hanging out with a bunch of ministers. (can you sense the sarcasm?)

I can never “top” his tokens of love for me. What I can do is tell him that he is loved. I can cuddle on the couch with him when he’s watching the game (even though I could care less). I can make his favorite food. Listen to him when he is frustrated with his job. And give him space when he needs to think.

 I know that he is intense. Moody and passionate. I know that my lack of organization drives him batty and that he doesn’t understand my need for creative outlets. But I also know that I married a committed and loyal man. He is proud of my creativity and will defend my fruitiness to anyone. Most importantly, he loves God more than he loves me. And I know that because of that love he will be faithful to me til the end of time. 

This doesn't mean that The Muffin is perfect. I know he is not. He can't certainly expect perfection from me. I am flawed. I cry during confrontation. I am too opinionated. I let my projects get the best of me. But, I also know that I am forgiven. And that I, in turn, must forgive.
So girls. When you are searching for the love of your life. It matters not if they flatter you…those words of praise can easily turn into criticism. It matters not if they long for your every word and touch. That can easily change when the next object of his obsession comes along. 

Find a man who loves God more than he loves you. Who hangs on the Word of God more than he hangs on your sweet praise and flattery. Who doesn’t need you to feel complete. Those are the guys worth marrying in a minute (or 10).
